BYOB Paulée-style Burgundy dinner with Jasper Morris MW – Thursday 16th January
We thought about it long and hard – for all of two minutes – before deciding that, on reflection, we won’t be promoting Dry January. Instead, we’re fully embracing the month’s Burgundy theme, with the ultimate antidote to such abstemious killjoy-ism…
In the midst of the various En Primeur tastings of the region’s nascent 2023 vintage, we’ll be hosting a joyous Paulée-style dinner, with the help of our good friend and Burgundy savant Jasper Morris MW.
Members are encouraged to dig deep into their cellars and bring along a bottle – or magnum – of a prized older Burgundian cuvée to share among the throng. And to set the tone, Jasper will be bringing along two august wines from his cellar – one red, one white – for guests to try – blind – in a competitive (but purely for fun) tasting.
Throughout the evening, Jasper will also give his thoughts on the 2023 vintage, marking Members’ cards for the appellations and wines to look for, as well as providing insights into the wider Burgundian scene.
To mark the occasion, our kitchen brigade have created a special Burgundian-inspired menu. First up, a hand-dived Scottish scallop served in its shell with caramelised beurre blanc sauce and crushed roasted artichokes, alongside sauteed mushroom, onion petals, saucisson and escargots. And that’s just for starters…
The main course will feature two servings of squab. The first, a traditional ‘chartreuse’ with the breasts and an escalope of foie gras wrapped in a cabbage leaf and steamed, served with a ‘Perigeux’ port jus laced with confit shallots and black truffle paste. The second, a pie to share between two, made from the braised squab legs and winter root vegetables.
And to finish, a generous hunk of 24-month aged comté, served with a slice of sticky parsnip and honey cake.
To add a further sense of occasion – and capacity – to the evening, we have commandeered the Lounge for the night, ensuring the full 67 party ambience.
